When Eire first opened, it was a new concept for the suburb of Clapham. Eire Café had taken up space where there once was a deli or a take way food shop. Tradies were the main clientele and they would stop there for their Mrs Macs pie. From the get go, Stephen had decided that he would only sell what he made. This was putting out some of the regular customers that used to drop in before Eire Café. One day, a cranky tradesman stopped in and gave Stephen a serve about not stocking pies. Stephen told him to come back the next day and he would have a pie for him. In that first week of making pies, he made 6 and sold 6 then he made 10 and then 50 and so on ..... That tradesman still comes in to this day.
