The Crafted Loaf

Hi there, I'm Helen and I've been baking sourdough bread for the past 6 years. I've worked in 3 sourdough bakeries - France, Victoria Australia and Perth Australia. It's taken me all this time to perfect my recipe, and now my bread is available to you! - If you live in the Bunbury / Busselton region!

WHY SOURDOUGH? because it is the healthiest way to eat bread. The long process of fermenting the flour makes the nutrients in the flour more available to your body, and also breaks down the strong proteins in the flour. These proteins are what people are reacting to when they eat non-fermented bread. A lot of people can't eat 'regular bread', but find that sourdough bread is fine for their digestion.

WHY ORGANIC? I use organic flour because I believe the chemicals we are spraying on our food is causing so many problems to people and our planet. So I want to provide you with clean healthy bread. I also use flour that is grown and milled here in WA.

WHY LOCAL? I'm from Christchurch in New Zealand. I was there when we had the big earthquakes. I found out that Christchurch is the central distribution center for most of the supermarket food in the south island, and after talking to my sister who lived in Invercargill - 8 hours drive away from Christchurch - I found out that there was no bread in their supermarkets either because of the earthquakes in Christchurch. I realised just how delicate our food system was, and how reliant we are on big companies to provide the food. So I thought I would start a local bakery. It would create a job for me, in which I'm very happy, and provide a healthy product to the local people, without the bread being trucked all over the country!
