I was diagnosed with Coeliacs Disease 8 years ago. It was the best thing to happen to me. I had always been very health consious and aimed to eat foods high in nutritional value, and yet I suffered poor physical and mental health for most of my adult life. The diagnosis was a lifesaver and explained why I had been feeling so poorly for so long. However, one of my greatest joys was eating a hunk of wholemeal bread, or toast, slathered in butter and honey and consumed for a great breakfast and start to the day. That simple pleasure was denied to me on my diagnosis! A simple thing, and yet my desire to find wholesome, wholemeal gluten free bread that was 'bread like', and by that I mean soft on the inside, a chewy crust and a realistic bread 'mouthfeel' hasn't been satisfied with any breads currently on the market.

It also concerns me that many GF breads come all the way from the UK! And this means the manufacturers concerns are about about shelf life, and not nutrition.

Australia is renowned for its grain growing and I want to support our farmers. That's why I choose Australian grown grains where possible.

In keeping with producing highly nutritious breads most of my flours are hand-milled in my kitchen and made into breads within a few hours, thereby maximising the nutritional value and helping produce soft breads with a real bread texture.
