Project’s extensive menu offers share platters and hearty meals with fresh ingredients and sparkling flavours. Rustic Italian meets Australian open fire cooking, with a cherry wood charcoal grill, and a rolling spit in full view of diners.

For group dining – or very hungry punters – a signature charcoal mix platter features baby beetroots and chicory salad, Atlantic salmon, lamb skewers, chicken wings and caponata. Project’s meat selection demonstrates Assenza’s commitment to quality, featuring Black Angus beef and Wagyu from Queensland. The menu is rounded out with healthy and flavoursome salads, and wood fired flatbreads featuring on trend delights: pulled pork and paprika mayo, pulled chicken and smoked tomato chutney, pulled lamb shoulder and lemon yoghurt, each with its own well matched slaw.

A distinctly Australian meal, brunch, is given a Mediterranean twist: crunchy granola is topped with poached pear, cinnamon spiced ricotta and orange blossom jelly; Sicillian baked eggs are rich with San Marzano tomato sauce, pork & fennel sausage, wild mushrooms and cavolo nero; Project’s range of artisan breads can be served with all of the expected condiments, as well as that great Italian export, Nutella. Comforting Australian classics are also included, such as sweet corn fritters with guacamole and crispy smoked speck.
