Welcome to Kusina, Canberra's own slice of the Philippines.

The Philippines is an archipelago of over 7,000 islands nestled in South East Asia with a population of over 98 million people.

Modern Filipino cuisine has developed a truly unique and distinctive character. As a colony of Spain for over 400 years, the Philippines naturally adopted many of its conquistadores delicacies, customers will find many of Kusina’s dishes are derived from well loved Spanish recipes. Filipinos were creating fusion cuisine long before it became hip!

Over the years these dishes took on characteristics of their own, drawing on the local Asian flavours, particularly those of the large Chinese community that settled in the country early on, and making use of the abundance of tropical vegetation, fresh produce and combining them to create a truly ‘East meets West’ blend of flavours.

Food and dining with family and friends is the cornerstone of the Filipino culture. It is at the heart of every celebration, from the smallest family gathering to huge community events - marking the milestones of their lives. It is around the dining table that Filipinos share food that has been prepared with love, with their family and friends.

It is this tradition of good food and great company that Kusina would like to share with customers - its adopted family, its new friends.
