Kushiage (串揚げ), is a Japanese dish of seasoned, skewered and fried meats. In Japanese, kushi (串) refers to the skewers used while age (揚げ) means a deep-fried cutlet of meat.
Kushiage can be made with various meats, seafood, and seasonal vegetables. These ingredients are seasoned, then skewered on bamboo kushi, dipped in egg, flour and panko crumbs then deep-fried in vegetable oil. They may be served straight or with a variety of Japanese flavoured sauces.
