Indian cuisine encompasses a wide variety of regional and traditional
cuisines native to India. Foreign invasions have played a major role in
influencing Indian cuisine. The union territory of Pondicherry in the southern part of the Indian Peninsula was a French colony for around 200 years,making French cuisine a strong influence on the area. The techniques, ingredients, and spices brought to this region when it was a French colonized have fused with the local approach to create an entirely unique Indian fusion cuisine. The resulting taste is different and, perhaps, a bit more subtle and refined. Inspired by the traditional cuisine of the French-Creole communities in Pondicherry.
