It starts with the grind. With our Mazzer Robur Electronic, we freshly grind each portion to maximise the beans’ flavour and carefully control the coarseness.
We love Technology, so apart from the classic tamp which will always have its place, we also use a PuqPres which guaranties a perfectly consistent tamp on every shot extracted.
Coffee is 90 – 98 % water so it has to be high quality and great tasting. For perfect coffee-making water we purify ours with reverse osmosis technology. With our Everpure MRS600HE-ii we remove impurities while maintaining precise mineral content levels, which are essential for flavour. For the best tasting water and a perfect extraction, we make sure our water has a TDF level of 105 ppm +/- 5%.
Our espresso is made on a top of the line 3 group Rancilio Classe 11 so our baristas can control the water temperature, steam power and extraction time for consistently great coffee. The most unique trait with this machine is the ability to control and vary the temperature of the pour, this means we can start the extraction at 87 degree and finish it at 92 to adjust different flavours from the same bean.
