El Qahirah

El Qahirah (Arabic for Cairo) is Sydney’s first Egyptian food truck, serving authentic Egyptian street food.

With a love for the traditional food and unique street culture of their home city, Cairo born George Kaldas and Ishac Soliman have teamed up to share the deliciousness with the streets of Sydney. After many years of friends, family and colleagues pestering them for more of their homemade dishes, the pair decided to follow their dream and make El Qahirah a reality.

El Qahirah serves the three most traditional dishes in Cairo – Koshary, Taameya and Fuul Medames. These foods are Egyptian staples that dominate the national diet, and are all made with ingredients that are now considered ‘superfoods’ - healthy, nutritious and filling.

Koshary is the national dish of Egypt – served in every home, most restaurants and roadside stalls across the country. A unique combination of lentils, macaroni and rice topped with a Middle Eastern spiced tomato sauce, chick peas and fried onions, Koshary is the unexpected delicacy every traveller to Egypt returns home raving about.

Taameya patties burst with the superfood-green of fava beans mixed with fresh and dried herbs. Served in a traditional balady flatbread pouch with tomato, cucumbers, pickles, radish and tahini, this dish has been a staple since pharaohs ruled Egypt over 3,000 years ago. Taameya has spread around the world in many variations and is often known as Falafel (the Ottomans took the recipe and substituted chickpeas for the fava beans).

Fuul Medames is the Egyptian breakfast of champions, also dating back to the pharaohs. Simply slow-simmered fava beans seasoned with olive oil, lemon juice, garlic and spices and served in a traditional balady flatbread pouch, this dish is packed full of protein, fibre and essential minerals to set you up for the day and keep you full.

George and Ishac will add more dishes to the menu in coming months, taking advantage of seasonal ingredients and allowing them to showcase more favourite Egyptian recipes.

With a design inspired by the streets of Cairo, a nod to the vibrant humour of its street vendors and the geometric shapes of Arabic patterns, El Qahirah is an eye-catching food truck that will turn heads. Available for private functions, and appearing at select markets and festivals, this food truck with a difference brings an authentic taste of Cairo street food to the streets of Sydney and NSW – coming in 2017.
