More about Trattoria Basiloco

Basiloco restaurant is the result of the dream of an Italian family originally from Sardinia, who moved to beautiful Byron Bay.
Our mission is to create an authentic Italian kitchen, inspired by the flavours of our beautiful island: the Italian region of Sardinia.
Sardinia, the second larges island in the Mediterranean, is located in the middle of the Mediterranean, just 20KM south of the French island of Corsica.
Sardinian cusine has many dishes in common with spanish cusine, due to Spanish dominance from early 1300 to 1700. Sardinian joined the Italian kingdon when it was born in 1861.Catalan ( a spanishj dialect) is still spoken to date in some cities in the north east of Sardinia.
Sardinian cousine is famous for its sea food specialities along the coasts, and for meat dishes from the inland.
Among the most famous dishes are: whole fishes, roasted suckling pig (porceddu) and spaghetti arselle e bottarga. The most famous wines from Sardinia are (Vermentino) white, and the ancient (Cannonau) red.Cannonau wine and (porceddu) suckling pig, seem to be recognized as some of the reasons forthe famous Sardinian longevity.

today at basiloco We still like simple things and tastes, our portions are generous but not overloaded with too many ingredients, we love to savour every single ingredient of a plate and to enjoy the way they combine with each other. For some it may be plain for us it means just perfection.

Our pasta is served al dente, al dente means “to the tooth”, because the centre is a bit hard and sticks to the teeths.
However, we understand it may not suit everybody's preference, so if you advice our friendly staff, we will be more than happy to cook your pasta a bit more.

Our wood fired oven pizzas are big (about 33cm) but thin crusted.
We don’t put tons of cheap ingredients on it, but the right amount of the best quality local products we can find.
Our slow rising dough is made with the best Italian flours to reach the right texture to be hand stretched.
